So, with the kids growing up and schedules changing, our lives have become increasingly busier. As a result of our busy days, I have decided to do a slow cooker challenge. I have read about this on other peoples blogs and I now am inspired.
After pursuing many online recipes, blogs and my own cookbooks I am ready to begin. I have compiled 24 recipes that I think will be good to try. The idea is to have enough recipes to create 24 meals to freeze and be on hand to pop into a slow cooker with little effort. Many of these recipes can be served with rice, potatoes or pasta.
I have made a grocery list of all of the foods that I will need to start this challenge. I am ready to shop this weekend and start. I am told that this prep time should take about 5 hours. I will let you know.
Doing this should free up some time after work for meal preparation. One of my least favourite things to do is come home and try to figure out what to make for dinner. If it takes that stress away a few times a week then my challenge is already won.
My family has agreed to give honest opinions about what they are eating. Even my son, who is just about the pickiest eater around. I do not expect great reviews from my son. I know if he likes it that it is a true winner!
So.... I will be back after my grocery shopping and prep work to tell you how the first part of the challenge went. Wish me luck!
